All by myself… (random junk)

Since going to the 5-day work week, and Ash-pea switching her work week, I’m rarely in the office by myself. Don’t get me wrong, I love my 5-day work week, the days are shorter and I feel like I actually have a whole week, instead of a 3-day weekend and 4-day overloaded work week, nothing in between. So anyways, it’s a real treat to have the office to myself. I feel free to be creative without anyone looking over my shoulder or interrupting my flow. Yes, I know it’s an office and the phone rings and people talk and emails *ding* in, but it always feels more calm when I’m here by myself. I can listen to any music I want and sing if I feel inspired. Haha, that’s actually quite often.

Last night I FINALLY got around to blanching and freezing all those carrots and tomatoes, AND I had forgotten I didn’t have any lunches for today and tomorrow, so I decided to make tofu scramble (v.1.3) at 9pm last night. Oh, the house smelled amazing with fresh mushrooms and peppers. Yowza! Now I just need to upload those photos of the new scramble.

Ice cream… VEGAN ice cream.

I had half a container of silken tofu to use after making French toast the other day (yeah, my camera was full, otherwise I would have taken photos of that… soooo good!). Anyways, I found this recipe for vegan ice cream that uses tofu and soy creamer and a few other things, so I gave it a whirl. I added peanut butter and chocolate chunks because, well, I made it so I can!

I’m sure there are a few servings here, but I could see eating the whole bowl!

Carrots, did you say CARROTS? Holy F#$%!

Yeah, I said carrots. I was picking the veggies that needed to be picked from the garden… tomatoes, various peppers…

and noticed one carrot popping out of the ground. Just one, I swear I saw only one. That’s what started it, the frenzy of what was to become my carrot picking/digging/thinning of the afternoon.

I don’t know how many there were, but I’m staring at the two (heavy) bowls… (Doc was trying to swipe a few)

AND this is MAYBE a quarter of what’s left. Needless to say I’ll have to find some recipes with carrots, lots and lots of carrots. (I don’t even like carrots that much… what was I thinking?)

Mmmmm maybe carrot cake, I like carrot cake…

Tofu Scramble v.1.2

So I found the tofu scramble I wanted to make (originally for breakfast) for dinner. The original one I made included mushroom, but this one I decided would be onions, peppers and garlic.

Oh. My. Garbonzo. This thing was amazing. A little spicy from the peppers, and a wonderfulness from the garlic, all wrapped up in a delicious tortilla (it was green… I dunno, maybe spinach or garden or something?).

People have always raved about tofu scramble, and I always thought “what’s the big deal?” Well, now I know. The big deal is a total party for my taste buds.

First, I used a fresh pepper from my garden (yeah, I know!)

Then I tossed that into the skillet with a little oil and red onion.

Then the good stuff — TOFU!

I let that cook for a few minutes, then added the spices.

Finally, I put on the tortilla, wrapped it up and chowed down.

Anyways, it was good. (I can’t wait to have the left overs tomorrow!)

Peanut Butter Pancakes

No animals were harmed in the making of these pancakes, not even me!

I was flipping through my catalog of recipes, looking for tofu scramble, and came upon this recipe. Now, I haven’t made pancakes in (probably) years, so whatever possessed me to whip this up be beyond me. Well, I tried it and I CONQUERED IT!

Yes, even the FIRST pancake turned out edible.

This recipe made 6 very descent sized pancakes, so I’m saving the other 4 for breakfast (and maybe lunch, or a treat for Doc) for tomorrow, maybe with some sliced banana on top. Yeah, that sounds good.

Oh, and I still need to find that tofu scramble recipe…

Yeah, it’s me… again.

I can’t believe I’m doing this again, but apparently I am. I felt like I had things to say, but now that I have a place to say them, my mind is a desert. Or a dessert. I did just make vegan ice cream, but since my camera is full and I don’t feel like taking the photos off, I guess you’ll just have to take my word for it.
